Cuvée « Côte & Mer »

Protected Côtes de Provence Appellation

The Cuvée Côte & Mer, formerly known as “Tradition”, was created in the early 1990s, at the time for the first bottling client of the “modern” era of Château des Bormettes, the Galeries Lafayette group. It is an entry-level product that is very representative of the La Londe area, with the fatness and fullness in the mouth that are characteristic of the Bormettes terroir. For the 2018 vintage, the Tradition cuvée has a new look and becomes “Côte & Mer”. New bottle, new label, Côte & Mer is the rosé of every moment.

Vinification

The blend is based on Grenache, with Cinsault and Rolle added. The harvest is mainly done at night, in order to favour the aromatic potential and to reduce the doses of sulphites. The juices are cold settling for an average of 48 hours, the vinification and maturing continue entirely in thermo regulated concrete vats. The bottling of this cuvée takes place from mid-winter to summer.

Tasting session

Light pink color. The nose is expressive and combines aromas of lime, grapefruit and orange with iodine nuances. The palate is fresh and mineral, with aromas of kumquat. It is a marine rosé, straightforward and clean, with a lively finish and a beautiful length on the palate. This wine is best served between 10 and 12°C as an aperitif, with tapas, or at the table to accompany grilled meat or fish, pizzas, or cheeses with a flowery rind.

Cuvée « l’Argentière »

Protected Côtes de Provence Appellation

The estate borders the beach of L’Argentière, whose name refers to the mining history of the Bormettes sector. Indeed, the Phocaeans exploited silver lead here as early as the 6th century BC. This activity was re launched in 1875 by Victor Roux, then owner of Château des Bormettes, whose initiative made the commune of La Londe-Les-Maures rich. Although the mines closed in 1929, some remains on the property still bear witness to this period, having inspired the name of this cuvée, by which Château des Bormettes shows all its uniqueness.
Vinification

The blend of this cuvée is mainly composed of Grenache, Cinsault and Rolle drop juice, macerated on the skins for 6 hours. The harvest is mainly done at night, in order to favour the aromatic potential and to reduce the doses of sulphites. The juices are cold settling at 8°C for 72 hours, the vinification and maturing continue entirely in thermo regulated concrete vats. The wine is then kept on its lees, developing its fatness, structure and aroma.

Tasting session

Pink color with pearly tints. The nose is very expressive and gourmet, with floral aromas and a hint of menthol. The heart of the palate is supple and powerful, with cherry flavours, with a persistent freshness. Its silky touch extends into a final that is both sweet and salty. A harmonious rosé, which can be enjoyed as an aperitif or at the table. It will open out between 10 and 12°C on grilled meats, veal with olives, and caramel pork in the Vietnamese style, spicy Mediterranean dishes such as paella, couscous or bouillabaisse.

Cuvée « Sans sulfites ajoutés »

Protected Côtes de Provence Appellation

At the Château des Bormettes, being full of curiosity and enjoying experimentation, we are always looking for new ways to improve our wines, to reveal new or different aspects of our terroir…and to meet the desires that wine can give rise to. For each vintage, we set ourselves a challenge, we try something new whilst respecting the basic principles of our wines (grapes that have fully matured, a commitment to quality, to use the smallest amount of additives possible).
Vinification

Our vision of what rosé should be is quite unique: for us it’s a true wine, and it has a real gastronomical role.
In this vintage the blend is principally Grenache (80%), supplemented by Cinsault (20%).
The making of this cuvée without added sulphites, a first for Château des Bormettes, has required constant care from our winemakers. We decided to mature this cuvée in an oval shaped concrete vat at 8 °C, a method that appeared the most in harmony with its ethos, and the best likely to enhance the very fine balance that this vintage promises. Bottled on the 5th April 2019, 2200 bottles of this vintage have been produced.

Tasting session

The youngest of our rosés is wonderfully mellow with a lovely mineral flavour and the aromas of tangy red berries. Ideal by itself, or served with tapas.
