Certaines parcelles expriment plus que d’autres la personnalité du millésime et le caractère de notre terroir de schistes. Nous avons suivi notre instinct en 2017 pour récolter et vinifier à part Le Rif, secteur où des fouilles archéologiques du XIXème siècle révélèrent la présence d’une exploitation viticole gallo-romaine. Majoritairement planté en Syrah d’un âge moyen de 20 ans, ce coteau est parmi ceux qui bénéficient le plus des influences de la Méditerranée située à moins de 900 mètres. Bien qu’hétérogène, son sol se singularise par une présence plus marquée de schistes gris, particulièrement pauvre, permettant une concentration naturellement élevée.
La récolte a eu lieu tout début septembre 2017, et a été intégralement manuelle, permettant un tri à la parcelle. Egrappée et partiellement foulée, la vendange a été refroidie et a macéré 5 jours avant un départ en fermentation sur les levures indigènes. Elle a été vinifiée dans une cuve dite d’infusion, en inox, permettant une extraction très douce, un système de grilles permettant de maintenir le chapeau de marc immergé. Puis la quintessence du jus obtenu – uniquement les gouttes – a été élevée en Inox pendant près d’un an avant mise en bouteille.
Sous sa robe sombre, ce vin dévoile des arômes subtils de garrigue, de fruits noirs et de poivre, révélant à l’aération des notes de violette envoûtantes. Suave et frais à la fois, il tapisse le palais d’un tanin soyeux, avec des saveurs d’un caractère intense, sur des notes de cerise, de réglisse et de cailloux. Très fin de tanin, souple et minéral, c’est un provençal pur jus, à la finale fraîche et salivante.
Ce vin de moyenne garde pourra s’apprécier également dans sa jeunesse, carafé entre 16 et 18°C, sur des viandes ou des poissons grillés de caractère, notamment le steak de thon, le canard aux olives, un Tartare dans la grande tradition, ou des fromages à pâte pressée.

Nous avons suivi notre instinct en 2016 pour récolter et vinifier à part Saint-Georges, secteur attenant à une colline où le cadastre napoléonien mentionnait les fondations d’une léproserie de l’ordre des Templiers, et où une charmante bâtisse en pierres locales abrite aujourd’hui nos bennes à vendange et leur valeureux conducteur. Majoritairement plantées en Syrah d’un âge moyen de 40 ans, ces deux parcelles couvrent à peine plus de 2 hectares au rendement très faible : bien que très ferreux, le sol est pauvre en argile, intensément caillouteux.

Egrappée et partiellement foulée, la vendange a été légerement refroidie et a macéré 2 jours avant un départ en fermentation sur les levures indigènes. Elle a été vinifiée en cuve, puis la quintessence du jus obtenu – uniquement les gouttes – a été élevée en demi-muids (chêne français) d’un vin pendant une année complète, avant un affinage final en cuve de quelques mois, pour une mise en bouteille fin février 2018.
Sous sa robe sombre, ce vin dévoile des arômes de mûre, de cassis et de graphite, avec des nuances de moka et de cerise burlat. La bouche attaque sur des notes de fruits noirs, ses tanins parfaitement gainés lui donnent beaucoup de verticalité, sa générosité et ses accents torréfiés sont équilibrés par la fraîcheur propre au millésime. La finale se prolonge sur une rémanence minérale.
Ce vin de bonne garde, à l’élevage particulièrement bien intégré, pourra s’apprécier également dans sa jeunesse, carafé entre 16 et 18°C, sur des viandes rouges grillées, du gibier, un poulet façon mole poblano, ou un canard laqué.

Some parcels express more than others the personality of the vintage and the character of our schist terroir. We followed our instincts in 2017 to harvest and vinify except Le Rif, an area where 19th century archaeological excavations revealed the presence of a Gallo-Roman winegrowing estate. Mostly planted with Syrah, with an average age of 20 years, this hillside is among the most influenced by the Mediterranean, located less than 900 meters away. Although heterogeneous, its soil is characterized by a more marked presence of grey shales, particularly poor, allowing a naturally high concentration.
The harvest took place at the beginning of September 2017, and was entirely manual, allowing sorting by plot. Destemmed and partially crushed, the harvest was cooled and macerated 5 days before a start of fermentation on indigenous yeasts. It has been vinified in a so-called infusion tank, made of stainless steel, allowing a very gentle extraction, a system of grids to keep the marc cap submerged. Then the quintessence of the juice obtained – only the drops – was raised in stainless steel for nearly a year before bottling.
Under its dark color, this wine reveals subtle aromas of garrigue, black fruit and pepper, revealing enchanting notes of violet with aeration. Sweet and fresh at the same time, it covers the palate with silky tannins, with flavors of intense character, on notes of cherry, liquorice and pebbles. Very fine tannin, supple and mineral, it is a pure Provençal juice, with a fresh and salty finish.
This wine with medium ageing potential can also be enjoyed young, decanted between 16 and 18°C, with meat or grilled fish with character, in particular tuna steak, duck with olives, Tartar in the great tradition, or pressed cheeses.

We followed our instincts in 2016 to harvest and vinify except for Saint-Georges, an area adjoining a hill where the Napoleonic cadastre mentioned the foundations of a leper colony of the Knights Templar, and where a charming building made of local stones now houses our grape harvest containers and their valuable driver. Mostly planted with Syrah with an average age of 40 years, these two plots cover just over 2 hectares with very low yields: although very ferrous, the soil is poor in clay and intensely stony.
The harvest took place in mid-September 2016, and was entirely manual, allowing sorting by plot. Destemmed and partially crushed, the harvest was slightly cooled and macerated 2 days before a start of fermentation on indigenous yeasts. It was vinified in vats, then the quintessence of the juice obtained – only the drops – was aged in half-muids (French oak) of a wine for a full year, before final maturing in vats for a few months, for bottling at the end of February 2018.
Under its dark colour, this wine reveals aromas of blackberry, blackcurrant and graphite, with hints of mocha and burlat cherry. The palate attacks on notes of black fruit, its perfectly sheathed tannins give it a lot of verticality, its generosity and its roasted accents are balanced by the freshness of the vintage. The finish continues with a mineral aftertaste.
This wine, with a particularly well integrated ageing process, can also be enjoyed young, decanted between 16 and 18°C, with grilled red meat, game, a poblano chicken or a lacquered duck.
